Tortilla strips


Stack 16 to 18 corn tortillas (6-inch diameter) and cut into 1/4-inch wide strips. Pour salad oil to a depth of 1 inch into a 3- to 4-quart pan and heat to 375 degrees F. on a deep-frying thermometer. Add strips, a handful at a time, and cook, stirring often, until crisp and lightly browned (about 1 min.). Lift out; drain on paper towels. Sprinkle with salt.

Huvos con queso


HUEVOS CON QUESO
(Mexican Eggs with Cheese)

Reminiscent of chile con queso (melted cheese with chiles), cheese sauce is blended with eggs and spooned over tortillas. Serve with sliced tomatoes and beer or iced tea.


Tortilla Strips (see below)
3 tablespoons butter or margarine
1 small onion, minced
1/2 teaspoon ground cumin
1 tablespoon all-purpose flour
1/2 cup sour cream
6 eggs, lightly beaten
1/2 cup diced tomatoes
1 large tomatillo, husked, rinsed and chopped (optional)
1 large Anaheim or other mild green chile, stemmed, seeded and chopped
Prepare Tortilla Strips. Distribute evenly among 6 dinner plates and keep warm in an 150 degree oven.

In a 10- to 12-inch frying pan, melt butter over low heat. Add onion and cumin; cook, stirring occasionally, until onion is soft (about 5 minutes). Mix in flour; cook, stirring, until bubbly. Remove from heat and blend in sour cream. Return to heat and cook, stirring, over low heat until smooth and bubbly. Add jack and cheddar cheeses and continue to cook, stirring, until melted. Stir in eggs; cook until eggs are lightly set and mixture looks like soft scrambled eggs (about 10 more minutes).

Dividing equally, spoon egg mixture over tortilla strips and sprinkle with tomatoes, tomatillo (if desired) and chile. Makes 6 servings.

Chili Con Queso Soup


CHILI CON QUESO SOUP (TORTILLA)

1/2 Large onion -- finely chopped
3 tablespoons Unsalted butter
1 1/2 cans (4 oz each) mild green -- chiles, drained, see
finely chopped
2 cans (14 1/2 oz each) plum -- tomatoes, drained, s
finely chopped
2 packages (3 oz each) cream cheese -- cut into bits
1 can (14 1/2 oz) chicken broth
1 1/2 cups Half-and-half
4 teaspoons Fresh lemon juice -- or to

Garlic powder to taste
Cayenne to taste
Salt to taste
Julienned tortilla chips -- fried crisp
Green onions -- chopped
Monterey jack cheese -- grated

Cook onion in butter over moderately low heat in a saucepan, stirring occasionally until onion is softened. Add chilies and tomatoes. Cook mixture 8 to 10 minutes over moderate heat until liquid evaporates, stirring occasionally. Stir in cream cheese. Maintain moderate-to-low heat until cheese melts. Stir in chicken broth, half-and-half, lemon juice, cayenne, and salt. Heat soup over moderate heat until hot, but do not boil. Sprinkle tortilla strips, green onions, and Monterey jack cheese over individual servings.

Tortillia Soup


Recipe By : Legends Rancho Deluxe by chef Michael Hanrahan

1 tablespoon canola oil
8 whole corn tortillas -- cut into 1" strips
1 cup onion -- diced
1 1/2 tablespoons jalapeno peppers -- seeded
-- minced
5 cloves garlic -- minced
1 tablespoon tomato paste
42 ounces canned tomatoes -- undrained
1 tablespoon ground cumin
63 ounces chicken broth, fat free
4 whole corn tortillas -- cut into 1/4" strips
2 cups boneless skinless chicken breasts -- cooked
-- shredded
1 cup avocado -- diced
1/2 cup sharp cheddar cheese -- shredded
1/2 cup fresh cilantro -- chopped

Heat oil in a large Dutch oven over medium-high heat. Add 1" tortilla pieces - cook 2 minutes or until crisp - stirring occasionally.

Add the onion, jalapeno and garlic - saute 3 minutes.

Add tomato paste and tomatoes - bring to a simmer and cook 10 minutes.

Stir in cumn and broth - bring to a boil. reduce heat to medium and simmer - uncovered - 40 minutes or until reduced to 8 cups.

Place half of soup in a blender - process until smooth - pour into a bowl. Repeat procedure with remaining soup. Return pureed soup to pan. Cook over medium-low heat until thoroughly heated.

Arrange tortilla strips in a single layer on a baking sheet. Bake at 400 for 7 minutes or until crisp - set aside.

Divide chicken and avocado evenly amoung 8 soup bowls. Pour soup into each bowl and top with cheddar cheese, cilantro and tortilla strips.

Chicken Enchilada Soup


1 small onion, chopped
1 garlic clove, chopped
2 Tbsp. olive oil
1 can (14 oz.) beef broth
1 can (14 oz.) chicken broth
1 can (10-3/4 oz.) cream of chicken soup
1 can (4 oz.) chopped green chiles
2 cups chicken breast, cooked and shredded
1-1/2 cups water
1 Tbsp. Worcestershire sauce
1 tsp. ground cumin
1 tsp. chili powder
1/2 tsp. pepper
6 flour tortillas
3 cups grated Cheddar cheese

Saute onion and garlic in olive oil. Add the next 10 ingredients;
bring to a boil. Cover, simmer for one hour. Cut tortillas into
1/2" strips; add with the cheese to the soup. Simmer
(uncovered) for 10 minutes. Serve.

The Ulitimate Enchilada


from Chile Pepper Magazine

FILLING:
4 cups shredded Carne Seca (dried beef) or the following recipe for Carne Machaca:

2 to 2-1/2 lbs. boneless beef roast, cut in large pieces
1 small onion, coarsely chopped
1-2 Tbsp. ground hot chile
water

Place ingredients in pan and cover with water and simmer for an hour and a half or until the meat starts to fall apart. Remove the beef, strain the broth, and save for the sauce. Allow the meat to cool and shred the meat by using 2 forks or your fingers.

SAUCE:

3 Tbsp. flour
4 Tbsp. oil
1 cup onions, chopped
2 cloves garlic, chopped
6 chopped green New Mexican chiles, roasted, peeled, seeded or 2(4 oz.)cans
1/2 tsp ground cumin
2 medium tomatoes, peeled, seeded and chopped
3 cups reserved beef broth

Combine flour and 3 Tbsp. oil to make a roux. Saute the mixture, stirring constantly, for 3-4 minutes. Set aside. Saute the onions and garlic in remaining oil. Stir in chiles, cumin, tomatoes, and broth. Bring to a boil, reduce heat, and simmer for 15 minutes. Stir in the roux and simmer fir a few minutes to thicken. NOTE: I add 2 Tbsp. hot chili powder

THE ENCHILADAS:

24 corn or blue corn tortillas
oil
2 cups shredded Monterey Jack cheese
1 cup chopped onions
shredded lettuce
chopped tomatoes

Fry tortillas briefly in hot oil to soften. Drain on paper towels.

To assemble: For each enchilada stack, place a little sauce on bottom of casserole dish, place a tortilla on top, then the beef, some cheese and onion, then some sauce. Repeat the procedure for 3 more layers and finish with a tortilla. Pour the sauce over the top. Bake at 350 for 15 minutes. Serve with lettuce and chopped tomatoes. May be topped with a fried egg if desired.

Red Chili Enchilada Cassrole


1 1/2 large onions, chopped
Butter
3 14-ounce cans Old El Paso Red Enchilada Sauce
1 teaspoon sugar
Salt
2 dozen corn tortillas
3 cups shredded pasteurized process cheese spread
1 pint heavy cream
3 eggs, beaten
Preheat oven to 350 degrees.

Cook onions in butter; add red enchilada sauce. Bring to a boil; add sugar and pinch of salt.

Arrange tortillas, cheese, heavy cream and sauce in layers in 3-quart casserole. Repeat several times. Pour eggs over last layer and bake 1 hour. Serve immediately.

Green Chili Chicken Enchladas


GREEN CHILE CHICKEN ENCHILADAS

12 - 18 corn tortillas
1/2 c. oil
8 oz. shredded Monterey Jack cheese
3/4 c. chopped onion
1/4 c. butter or margarine
1/4 c. flour
2 c. chicken broth
4 oz. chopped green chiles
1 c. sour cream
1 chicken or 3 breast halves, boiled and shredded
Cook tortillas in hot oil until softened (5 seconds).

Place some chicken, cheese, and onion on each tortilla and roll up. Place seam side down in greased baking pan.

Melt butter, add flour, stir well. Add broth; cook till thick. Stir in sour cream and chilies. Stir until heated. Pour over enchiladas.

Bake at 375 degrees for 20 minutes or until heated through. Put remaining cheese on top and return to oven for 5 more minutes. Garnish with chopped green onions and a sprig of fresh cilantro, if desired.
These are the best chicken enchiladas you have ever tasted!

    * Ensure that food is in perfect condition before freezing.
    * Divide food into small portions. This ensures rapid freezing and better quality on defrosting.
    * Use the correct type of packaging or container.
    * Make sure that food is tightly wrapped or sealed and that no air or water can get in or out.
    * Check that the temperature of the freezer is at 0°F or below.
    * Do not freeze too many unfrozen items at once.
    * Leave space around newly introduced packages.
    * Defrost items in the refrigerator or in cold water.

Homemade Maple Syrup


HOMEMADE MAPLE SYRUP   

1 3/4 c. white sugar
1/4 c. brown sugar
1 c. water
Combine and bring to a boil. Cover and cook 3 minutes. Cool slightly. Add:
1/2 tsp. vanilla
1/2 tsp. maple flavoring
Cover saucepan for a few minutes as syrup cooks to melt down crystals.

30 More Money Saving Tips

1)   Dry your clothes outside, instead of using the energy. Your clothes will last longer too!  The savings is not so much, but it does add up, the
average load of drying your clothes costs you: $.50 a load for electric, $.25 for gas.  Multiply that number by your loads, and if you hang up your clothes, you can save that money towards your credit card debt!

2)  Buy only one all purpose cleaner.  You do not need 10- Example: (aprox. values prices found on Netgrocer (I listed their cheapest prices)
glass cleaner - 3.85            Borax                       $5.15
floor cleaner - 4.49            Vinegar and Water
Bathroom/cleaner - 4.59    for glass and more!     .95
toilet cleaner -  3.19

3)  Use vinegar and water and and old spray bottle for washing windows!  Use old newspapers to wipe with.  $.95

5)  Use Netflix or Hulu in place of cable.  It is less expensive, no commercials and you can watch great movies and documentaries! 

6)  If you can, stop your internet at home and use the library instead.
Savings of $35.00 per month

7)  Set your thermostat lower in the winter and higher in the summer.  Each degree you turn down the heat saves 3 percent of heating costs, while each degree you raise the temperature of your air conditioner saves 3-4 percent of cooling costs.

8)  Change to florescent bulbs (if you can stand it) Or go, High Intensity light(HTL):
Example:  a 60 watt light bulb cost the average of $6.81 per month to use.  A fluorescent bulb is $1.60 a HIL is $3.21
Let's say that you have five 60 watt bulbs in your house:  that is $34.05 per month.  A flourscent is: $8.00 per month  A Savings of: $26.05 per month.  or
HIL- $16.05 a Savings of $18.00 per month.  Anyway you look at it, you are saving something....


9)  Do the house repairs yourself.
10)  Sell one of your cars. Do you really need two cars?  If you only have one, think of using your bike more.
11)  Try to carpool.

12)  Take public transportation or ride your bike!  In some cities you can purchase a monthly pass for $60.00 per month.  If you are spending $250.00 a month on gas going to and from work you can save $190.00 per month!  It might do you some good to do some walking to keep your body moving, in rain, snow or sunshine.
13)   Don't drive around with an empty tank of gas, the gas evaporates faster that way.  Keep it at least half full if you can.  Plus, you never know when the prices will go up!
14)  Grow a garden.

15)  Quit eating and buying all junk food.  Simply put, pre-made junk food costs more.
Example:  Healthy Choice Chicken with Rice at $2.95 a 15oz can.  Serves 2 people, but you will not get full and the product is all processed food and not really a full meal.

Total               $10.18  Now that does not seem like a savings, but read on....
You can use this chicken and cook it in your crock pot, remove 1/2 of the chicken and put it in a pan, mix your vegetables and cut up onion, throw in a little rice (.69 16 oz)  That meal will cost you: $6.68, BUT!  You will have more than one meal, you can use the leftovers for your lunch at work, and another dinner (for two)  Instead of getting just one meal, you now have 4 meals the real cost for you first meal (and the other three) is: $1.67  Now that sounds better doesn't it?
A savings of: $1.28  Now, you still have another 1/2 of a chicken to make another meal with as well.
16)  Make your own laundry detergent and household cleaners.

17)  Use crystal deodorant, it is healthier, because of the lack of aluminum and last longer, but costs more...but will save you in the long run.

18)  If you smoke, roll your own.  You will smoke less, and maybe you can work towards quitting?  More on that later....
19)  Ride a motorcycle...saves on gas!  A motorcycle gets an average of 56 miles to the gallon.  The car gets an average of 25mpg.  At the current average cost of gas at $4.00 per gallon.  Example:  The average car holds 16 gallons of gas.  You use one tank a week at the cost of $64.00 per week.  You can drive 400 miles on that tank of gas.  With a motorcycle you can drive the same distance for $28.74.  That is a $36.00 per week savings or $144.00 per month! Women can use motorcycles too, why not? 

20)  Consider a pay-as- you-go mobile phone.  The average cost for a mobile phone is $50.00 per/month; Virgin mobile prepay is $25.00 per month for 300 talk minutes and unlimited data. That is a $25.00 per month savings.

21)  Sell your clutter on E-Bay or a garage sale.

22)  Use your talents to earn extra cash.

23)  Shop around for the cheapest car insurance.  You may find quite a savings out there! Example:  If your car is old and you do not get comprehensive: you can pay as low as $522 per year.
Premium plans cost anywhere from $1,000 per/year to $4,000 per year depending on your risk factors.  By shopping around, you may be able to save up to $500 per/year or more.  That is a $41.66 per month savings!  


24)   Learn to say "NO" when friends ask you to go out all the time.  If you spend 20 dollars on drinks three times a week, that is a $60 dollars weekly at a savings, $240 dollars a month, that you can put towards your credit card debt.

25)  Try to talk your family into the Christmas lottery idea.  Put a limit on the price to let's say 50$.  You can save at least 100 dollars with this idea! Depending on the size of your family, at least there are three people you buy for!

26)  Consider paying for your car insurance 6 months at a time:  most insurance companies offer a discount when you do this. 

27)   Every time you wash your clothes, put the amount that it would cost at the laundry mat in a jar on top of your washer instead!  It costs .50 cents per/load to wash and 1.00 per load to dry.  Hang up your clothes instead, but if you can't hang out your clothes put 1.50 in a jar each time you wash clothes.  Take that money saved and put it towards your electric bill, or your credit card
debt.  If you wash 3 loads a week, you will save $9, that is $36 a month!

28)   Don't buy payment protection for your credit cards.  You can save $100.

29)   Avoid extended warranties.  Most goods are reliable, how many times has your fridge broken down?  Do you need to add $15 dollars to that toaster?

30)  Remember:  If you don't need it, don't buy it!  This page has a total of $909.15 in possible savings per month!
